Chloe had to make us dinner the other night for a school project. Not gonna lie, I wish there was a school dinner project once a week – haha.
We looked through my three favorite cookbooks, one of which is Autoimmune Paleo Cookbook, to find a couple of recipes that we thought everyone would enjoy.
A friend recommended the Autoimmune Paleo Cookbook to me years ago when I was really struggling with stomach/body issues and I’ve been a fan ever since. It’s a fabulous cookbook, regardless of whether you need to eat a certain way and/or are Paleo. I’m not Paleo by any means but I do limit my intake of certain grains and have removed others all together because of digestive and allergy issues. There isn’t a single recipe that I’ve made from this cookbook that my family hasn’t liked.
This quick and easy cucumber salad was delicious and tasted even better the next day as leftovers after my run.
The salad was a mix of cucumbers, olive oil, apple cider vinegar, chopped red onions, fresh parsley, and fresh mint.
